Ingredients
  

For the Yukari Seasoning
  • 1 cup dried shiso leaves the star of the show!
  • 1/4 cup salt helps to preserve the shiso and enhances its flavor
  • 1/4 cup toasted sesame seeds adds crunch and nutty flavor
  • 1 tbsp sugar balances the saltiness
  • 1 tbsp red shiso powder optional for extra flavor and color

Method
 

  1. Step 1: Rinse the dried shiso leaves under cold water to remove any impurities.
  2. Step 2: Pat the leaves dry with a clean kitchen towel.
  3. Step 3: Spread the leaves out on a clean baking sheet and allow them to air dry completely.
  4. Step 4: Finely chop the dried shiso leaves.
  5. Step 5: In a mixing bowl, combine the chopped shiso leaves, salt, toasted sesame seeds, sugar, and red shiso powder (if using).
  6. Step 6: Mix thoroughly until all ingredients are well incorporated.
  7. Step 7: Store the Yukari seasoning in an airtight container in a cool, dry place.

Notes

Store in an airtight container away from sunlight and moisture. It should last for about 4 to 6 weeks.
