- Step 1: Start by cooking the udon noodles according to the package instructions. Drain and set aside.
- Step 2: In a large skillet or wok, heat the vegetable oil over medium heat.

- Step 4: Toss in the julienned carrot, sliced bell pepper, and shiitake mushrooms. Stir-fry for about 5-7 minutes until the veggies are tender.
- Step 5: Stir in the chopped bok choy and cook for an additional 2-3 minutes until it wilts.
- Step 6: Pour in the vegetable broth, soy sauce, mirin (if using), and sesame oil. Bring everything to a simmer.
- Step 7: Add the cooked udon noodles to the skillet, stirring to combine and heat through for 2-3 minutes.

Notes
If you have leftovers, store the udon in an airtight container in the fridge for about 3 days. To reheat, add a splash of broth or water to loosen it up and heat in a pan or microwave.
