- Step 1: In a pot, bring 4 cups of water to a boil. Once boiling, add the tapioca pearls. Cook according to the package instructions until they become translucent, usually around 15-20 minutes.
- Step 2: Once cooked, drain the pearls and rinse them under cold water to prevent sticking. Set them aside.
- Step 3: In a separate pot, steam the diced taro until tender, about 15-20 minutes.
- Step 4: Once the taro is cooked, mash it into a smooth paste. You can use a fork or a potato masher, or a food processor for extra smoothness.
- Step 5: In a mixing bowl, combine the mashed taro, coconut milk, sugar, and a pinch of salt. Mix until the sugar dissolves.
- Step 6: Gently fold the cooked tapioca pearls into the taro mixture, being careful not to break them.
- Step 7: Serve this delightful dessert warm or chilled over ice, if preferred. Enjoy every creamy bite!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. The dessert tastes great cold, but reheat in the microwave if you prefer it warm.
