  • 1 cup taro peeled and diced
  • 1 cup tapioca pearls
  • 4 cups water
  • 1 cup coconut milk
  • ½ cup sugar adjust to taste
  • 1 pinch salt

Method
 

  1. Step 1: In a pot, bring 4 cups of water to a boil. Once boiling, add the tapioca pearls. Cook according to the package instructions until they become translucent, usually around 15-20 minutes.
  2. Step 2: Once cooked, drain the pearls and rinse them under cold water to prevent sticking. Set them aside.
  3. Step 3: In a separate pot, steam the diced taro until tender, about 15-20 minutes.
  4. Step 4: Once the taro is cooked, mash it into a smooth paste. You can use a fork or a potato masher, or a food processor for extra smoothness.
  5. Step 5: In a mixing bowl, combine the mashed taro, coconut milk, sugar, and a pinch of salt. Mix until the sugar dissolves.
  6. Step 6: Gently fold the cooked tapioca pearls into the taro mixture, being careful not to break them.
  7. Step 7: Serve this delightful dessert warm or chilled over ice, if preferred. Enjoy every creamy bite!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The dessert tastes great cold, but reheat in the microwave if you prefer it warm.
