Ingredients
  

For the Meatballs
  • 1 lb ground pork
  • 0.5 lb ground beef
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 0.25 cup green onions finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 large egg
  • 0.25 cup breadcrumbs
For the Hot Pot Broth
  • 6 cups chicken or vegetable broth
  • 2 slices ginger
  • 3 cloves garlic smashed
  • 2 tbsp soy sauce
  • 1 tbsp miso paste
  • 1 tbsp rice vinegar
  • 2 pieces green onions cut into pieces
  • 1 tsp chili oil optional
For the Hot Pot Ingredients
  • Assorted vegetables
  • Thinly sliced meats
  • Noodles

Method
 

  1. Step 1: In a large bowl, combine the ground pork, ground beef, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, salt, black pepper, egg, and breadcrumbs. Mix until everything is well combined. Form the mixture into small meatballs, about 1 inch in diameter, and set them aside.
  2. Step 2: In a large pot, combine the chicken or vegetable broth, ginger slices, smashed garlic, soy sauce, miso paste, rice vinegar, green onion pieces, and chili oil (if using). Bring this mixture to a simmer over medium heat and let it cook for about 15 minutes to allow the flavors to meld. Remove the ginger slices and green onion pieces afterward.
  3. Step 3: Add the meatballs to the simmering broth. Cook for about 10-12 minutes, or until they are fully cooked and start to float to the surface.
  4. Step 4: While the meatballs are cooking, arrange your assorted vegetables, sliced meats, and noodles on a platter for serving.
  5. Step 5: Once your meatballs are cooked, transfer the hot pot broth to a portable burner or a serving pot at the table. Guests can add their choice of vegetables, meats, and noodles to the hot broth to cook to their liking. Enjoy the experience of cooking and sharing!

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat gently on the stove to preserve flavors and texture.
