Ingredients
  

For the Tai Meshi
  • 2 cups cooked rice use leftover rice if available
  • 1 cup leftover baked sea bream flaked
  • 2 cups dashi stock
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 green onion finely chopped for garnish
  • Salt to taste
  • Nori (seaweed) for garnish (optional)

Method
 

  1. Step 1: In a pot, combine the cooked rice, dashi stock, soy sauce, mirin, and sake.
  2. Step 2: Gently fold in the flaked leftover baked sea bream.
  3. Step 3: Bring the mixture to a boil over medium heat, then reduce to low heat and cover.
  4. Step 4: Simmer for about 10 minutes, or until the rice has absorbed the liquid.
  5. Step 5: Remove from heat and let it sit, covered, for an additional 5 minutes.
  6. Step 6: Fluff the rice with a fork, then season with salt to taste.
  7. Step 7: Serve hot, garnished with chopped green onion and nori, if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop, adding a splash of water if it seems dry.
