Ingredients
  

For the Simmered Fried Tofu and Greens
  • 1 block firm tofu drained and pressed
  • 2 tbsp vegetable oil for frying the tofu
  • 2 cups mixed greens e.g., spinach, bok choy, or kale
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp vegetable broth or water
  • 1 tsp sesame oil
Salt and pepper
  • Optional: Sliced green onions

Method
 

  1. Step 1: Cut the pressed tofu into bite-sized cubes.
  2. Step 2: In a large skillet, heat the vegetable oil over medium heat. Add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  3. Step 3: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  4. Step 4: Add the mixed greens to the skillet and stir-fry for 2-3 minutes until they are wilted.
  5. Step 5: Return the fried tofu to the skillet. Add the soy sauce, vegetable broth or water, and sesame oil. Stir gently to combine.
  6. Step 6: Season with salt and pepper to taste. Simmer for an additional 2-3 minutes to heat through.
  7. Step 7: Serve warm, garnished with sliced green onions if desired.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 3-4 days. Reheat gently before serving.
