Ingredients
  

For the Broth
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup dashi stock or 1 packet of instant dashi
  • 2 tbsp soy sauce
  • 1 tbsp mirin
For the Toppings
  • 1 cup sliced chashu pork
  • 1 cup bamboo shoots menma
  • 1 cup green onions chopped
  • 4 servings ramen noodles

Method
 

  1. Step 1: In a large pot, combine the chicken broth, water, and dashi stock. Bring it to a simmer over medium heat.
  2. Step 2: Stir in the soy sauce, mirin, and salt to taste. Let the broth simmer for about 15-20 minutes to develop flavors.
  3. Step 3: Cook the ramen noodles according to package instructions. Once done, drain and set aside.
  4. Step 4: Prepare the toppings: slice the soft-boiled eggs in half and chop the green onions.
  5. Step 5: To serve, place a portion of the cooked noodles in a bowl, ladle the hot broth over the noodles, and arrange the chashu pork, bamboo shoots, soft-boiled eggs, green onions, and nori on top.

Notes

Store broth and noodles separately to maintain texture. Broth can be stored in the fridge for up to 3 days.
