- Step 1: In a bowl, combine the salmon fillets with shio koji, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for enhanced flavor.
- Step 2: Preheat the oven to 400°F (200°C).
- Step 3: Remove the salmon from the refrigerator and gently rinse off the shio koji under cold water. Pat the fillets dry with paper towels.
- Step 4: In a skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets, skin side down, and sear for about 3-4 minutes until golden brown.
- Step 5: Carefully flip the salmon and transfer the skillet to the preheated oven. Bake for an additional 5-7 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Step 6: Remove from the oven and season with salt and pepper to taste. Serve with lemon wedges and garnish with fresh herbs.
