Ingredients
  

For the Senmaizuke
  • 1 cup daikon radish finely shredded
  • 1 cup carrot finely shredded
  • 1 cup cucumber finely shredded
  • 1 cup napa cabbage finely shredded
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon soy sauce
  • 1 teaspoon sesame seeds optional

Method
 

  1. Step 1: In a large mixing bowl, combine the shredded daikon, carrot, cucumber, and napa cabbage.
  2. Step 2: In a separate bowl, whisk together the rice vinegar, sugar, salt, and soy sauce until the sugar is completely dissolved.
  3. Step 3: Pour the vinegar mixture over the shredded vegetables and toss to combine thoroughly.
  4. Step 4: Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  5. Step 5: Before serving, sprinkle with sesame seeds if desired. Serve chilled.

Notes

Store your Senmaizuke in an airtight container in the refrigerator. It will keep well for up to one week.
