Ingredients
  

For the Seafood Salad
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup cooked crab meat
  • 1 cup cooked scallops chopped
  • 2 cups mixed salad greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cucumber diced
  • 1/4 cup black olives sliced
For the Vinaigrette
  • 1/4 cup olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • to taste salt
  • to taste pepper

Method
 

  1. Step 1: In a large bowl, combine the cooked shrimp, crab meat, and scallops. This is where the magic begins!
  2. Step 2: Add the mixed salad greens, cherry tomatoes, red onion, cucumber, and black olives to the seafood mixture. Just look at those colors!
  3. Step 3: In a separate bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper until well combined. This vinaigrette will tie all the flavors together.
  4. Step 4: Pour the vinaigrette over the seafood salad and toss gently to coat. Be gentle to keep the seafood intact!
