Ingredients
  

For the Custard
  • 2 cups milk Whole milk works best for a rich flavor.
  • 1/2 cup granulated sugar This sweetens the custard beautifully.
  • 3 large eggs They provide the perfect texture and richness.
  • 1 teaspoon vanilla extract A must for that lovely aroma and flavor.
For the Caramel
  • 1 tablespoon water This is for making the caramel.
  • 2 tablespoons granulated sugar For the caramel.

Method
 

  1. Step 1: Preheat your oven to 320°F (160°C).
  2. Step 2: In a saucepan, heat the milk over medium heat until it’s just warm. Be careful not to let it boil!
  3. Step 3: In a mixing bowl, whisk together the eggs and granulated sugar until well combined.
  4. Step 4: Gradually pour the warm milk into the egg mixture while whisking continuously.
  5. Step 5: Add the vanilla extract and mix until smooth.
  6. Step 6: In a small skillet, combine the water and 2 tablespoons of sugar over medium heat. Stir until the sugar dissolves, then let it simmer until it turns a light amber color. Remove from heat.
  7. Step 7: Quickly pour the caramel into individual ramekins, swirling to coat the bottom.
  8. Step 8: Strain the custard mixture through a fine sieve into the ramekins, dividing it evenly.
  9. Step 9: Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  10. Step 10: Bake in the preheated oven for 30-40 minutes, or until the custard is set but still slightly jiggly in the center.
  11. Step 11: Remove from the oven and let cool at room temperature. Then refrigerate for at least 2 hours before serving.
  12. Step 12: To serve, run a knife around the edge of each ramekin, invert onto a plate, and enjoy!

Notes

To keep your purin fresh, store it covered in the refrigerator. It’s best enjoyed within 3-4 days.
