Ingredients
  

For the Pickled Daikon
  • 1 medium daikon radish peeled and sliced into thin rounds
  • 2 tbsp shio koji salted rice malt
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt essential for the pickling process

Method
 

  1. Step 1: In a mixing bowl, combine the shio koji, rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.
  2. Step 2: Add the sliced daikon to the bowl and toss well to ensure each piece is coated with the mixture.
  3. Step 3: Transfer the daikon and marinade into a clean, airtight container.
  4. Step 4: Seal the container and refrigerate for at least 24 hours to allow the daikon to pickle.
  5. Step 5: Serve chilled, garnished with chili flakes or sesame seeds if desired.

Notes

Store your pickled daikon in the refrigerator in an airtight container. It should last for about 2-3 weeks.
