Ingredients
  

For the Oxtail Oden
  • 2 lb oxtail cut into pieces
  • 8 cups water
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tsp salt
  • 1 daikon radish peeled and sliced
  • 2 carrots sliced
  • 1 onion quartered
  • 1 block fish cake sliced
  • 4 green onions chopped for garnish

Method
 

  1. Step 1: In a large pot, combine the oxtail and water. Bring to a boil over medium heat, then reduce to a simmer. Skim off any foam that rises to the surface.
  2. Step 2: Add soy sauce, mirin, sake, and salt to the pot. Stir to combine well.
  3. Step 3: Add in the daikon radish, carrots, and onion. Cover the pot and let it simmer for 2-3 hours, or until the oxtail is tender and the flavors meld together.
  4. Step 4: Once the oxtail is tender, add the sliced fish cake to the pot and cook for an additional 10-15 minutes, allowing it to soak up the delicious broth.
  5. Step 5: Before serving, taste and adjust the seasoning if necessary. Serve hot, garnished with chopped green onions for that fresh touch.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze it for longer storage; just make sure to let it cool completely before freezing.
