For the Miso Butter Cookies
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup white miso paste
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and miso paste until smooth and well combined.
  3. Step 3: Add the vanilla extract and eggs to the mixture, and beat until fully incorporated.
  4. Step 4: In a separate bowl, whisk together the flour, baking soda, and sea salt.
  5. Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in the dark chocolate chips.
  6. Step 6: Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Step 7: Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  8. Step 8: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
