  • 1 cup coconut milk rich, creamy base
  • 1 cup almond milk lighter counterpart
  • 1/4 cup maple syrup natural sweetener
  • 2 tsp matcha powder adds flavor and color
  • 1 tbsp agar-agar powder plant-based thickener
  • 1 tsp vanilla extract adds warmth and depth
  • A pinch of salt to enhance flavors

Method
 

  1. Step 1: In a saucepan, combine the coconut milk, almond milk, maple syrup, matcha powder, and salt. Whisk together until smooth.
  2. Step 2: In a separate small bowl, mix the agar-agar powder with 1/4 cup of water. Let it sit for a few minutes to hydrate.
  3. Step 3: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently.
  4. Step 4: Once simmering, add the hydrated agar-agar mixture to the saucepan. Stir continuously until the agar-agar is fully dissolved, about 2-3 minutes.
  5. Step 5: Remove the saucepan from heat and stir in the vanilla extract.
  6. Step 6: Pour the mixture into serving cups or molds and let it cool at room temperature for about 30 minutes.
  7. Step 7: Refrigerate for at least 4 hours or until set.

Store in the refrigerator in an airtight container for up to 5 days. You can make this dessert a day in advance for entertaining.
