- Step 1: In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the mixture is warm, and the sugar has dissolved, but do not let it boil.
- Step 2: In a separate bowl, whisk together the matcha powder and a few tablespoons of the warm cream mixture until smooth and free of lumps.
- Step 3: In another bowl, whisk the egg yolks until they are pale and slightly thickened.
- Step 4: Gradually add the warm cream mixture to the egg yolks, whisking constantly to temper the yolks.
- Step 5: Return the combined mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).
- Step 6: Remove from heat and stir in the matcha mixture, vanilla extract, and a pinch of salt until well combined.
- Step 7: Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
- Step 8: Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Step 9: Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
- Step 10: Serve and enjoy your homemade matcha ice cream!
Notes
Your homemade matcha ice cream can be stored in an airtight container in the freezer for up to two weeks. Just remember to let it sit at room temperature for a few minutes before scooping to make it easier to serve.
