- Step 1: Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter and dust with flour, tapping out the excess.
- Step 2: In a small saucepan, melt the butter over low heat. Allow it to cool slightly.
- Step 3: In a mixing bowl, whisk together the eggs and granulated sugar until the mixture becomes pale and frothy.
- Step 4: Stir in the vanilla extract and lemon zest (if using).
- Step 5: In another bowl, combine the sifted flour, baking powder, and salt. Gradually fold this dry mixture into the egg mixture.
- Step 6: Gently fold in the melted butter until just combined. Be careful not to overmix, as we want to keep that airy texture.
- Step 7: Spoon the batter into the prepared madeleine molds, filling each cavity about three-quarters full.
- Step 8: Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers spring back when lightly touched.
- Step 9: Remove from the oven and allow the madeleines to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Step 10: Dust with powdered sugar before serving, if desired. Enjoy!

Store madeleines in an airtight container at room temperature for up to 3 days. Freeze them in a single layer for longer storage.
