Ingredients
  

For the Kare Kare
  • 2 lbs oxtail cut into pieces
  • 1/2 lb tripe cleaned and cut into pieces
  • 1/2 lb beef shank cut into pieces
  • 1/2 cup peanut butter
  • 1/4 cup rice flour
  • 1/4 cup annatto oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1/2 lb eggplant sliced
  • 1/2 lb banana heart sliced
  • 1/2 lb bok choy or green beans
  • 6 cups water
  • Salt and pepper to taste
  • Shrimp paste (bagoong) for serving

Method
 

  1. Step 1: In a large pot, combine the oxtail, tripe, and beef shank. Add water and bring to a boil. Skim off any impurities that rise to the surface.
  2. Step 2: Reduce the heat and let it simmer for about 2 to 3 hours, or until the meat is tender.
  3. Step 3: Once tender, remove the meat and strain the broth. Reserve the broth and set it aside.
  4. Step 4: In a separate pan, heat the annatto oil over medium heat. Sauté the onion and garlic until fragrant.
  5. Step 5: Add the peanut butter and rice flour to the sautéed mixture, stirring until well combined.
  6. Step 6: Gradually add the reserved broth to the peanut butter mixture, stirring continuously to avoid lumps. Bring to a simmer.
  7. Step 7: Stir in the cooked meat until it is well coated in the sauce. Let it simmer for an additional 10 minutes.
  8. Step 8: Add the eggplant, banana heart, and bok choy (or green beans). Cook until the vegetables are tender.
  9. Step 9: Season with salt and pepper to taste.
  10. Step 10: Serve hot with shrimp paste on the side.

Notes

Kare Kare can be stored in an airtight container in the refrigerator for up to 3 days. If you want to keep it longer, consider freezing it for up to 3 months.
