- Step 1: Rinse the shrimp or prawns under cold water to remove any surface debris.
- Step 2: Using a pair of kitchen scissors, cut along the back of the shrimp or prawn from the head to the tail. Take care not to cut too deeply.
- Step 3: Gently pull back the shell to expose the flesh. If you prefer, you can remove the shell completely.
- Step 4: Locate the dark vein running along the back of the shrimp or prawn. This is the digestive tract.
- Step 5: Use the tip of a knife or a toothpick to lift the vein out of the flesh. Pull it out gently to avoid breaking it.
- Step 6: Rinse the shrimp or prawn again under cold water to remove any remaining debris.
- Step 7: Repeat the process for the remaining shrimp or prawns.
- Step 8: Your shrimp or prawns are now ready for cooking!
Notes
Prep shrimp or prawns ahead of time if hosting a dinner party; they can be stored in the fridge for a day or two.
