Ingredients
  

For the Mochi
  • 1 cup sweet rice flour (mochiko) gives mochi its chewy texture
  • 1 cup water essential for mixing
  • 1/4 cup granulated sugar adds sweetness
  • Cornstarch or potato starch used for dusting

Method
 

  1. Step 1: In the bowl of your stand mixer, combine the sweet rice flour, water, and granulated sugar.
  2. Step 2: Attach the paddle attachment and mix on low speed until everything is well combined.
  3. Step 3: Increase the speed to medium and mix for about 5 minutes until smooth.
  4. Step 4: Transfer the mixture to a microwave-safe bowl and cover with plastic wrap.
  5. Step 5: Microwave on high for 2 minutes, stir, then cover and microwave for an additional 1-2 minutes until opaque and sticky.
  6. Step 6: Dust a clean surface with cornstarch or potato starch, transfer mochi onto it, and allow to cool slightly.
  7. Step 7: Knead with cornstarch-dusted hands and shape as desired.

Notes

To keep your mochi fresh, store it in an airtight container at room temperature for up to a few days.
