Method
- Step 1: Preheat your oven to 325°F (165°C). Grease and flour a 9-inch loaf pan to ensure your cake comes out perfectly.
- Step 2: In a bowl, combine the mixed dried fruit and chopped nuts. Set this aside while you prepare the rest.
- Step 3: In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. This is where the magic of flavor starts!
- Step 4: In a large mixing bowl, beat the granulated sugar, brown sugar, and eggs until well combined. Then add the orange juice and vanilla extract, mixing until smooth.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Now, gently fold in the fruit and nut mixture.
- Step 6: Pour the batter into your prepared loaf pan, spreading it evenly.
- Step 7: Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Step 8: Allow the fruitcake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Once your fruitcake is completely cool, you can store it in an airtight container at room temperature for up to a week. For longer storage, consider wrapping it tightly in plastic wrap and then foil, keeping it in the fridge for up to a month. You can even freeze it for up to three months!
