Ingredients
  

For the Popovers
  • 1 cup all-purpose flour
  • 1 cup milk
  • 3 large eggs
  • 1/2 teaspoon salt
  • 2 tbsp unsalted butter melted
For the Strawberry Butter
  • 1/2 cup unsalted butter softened
  • 1/2 cup fresh strawberries pureed
  • 1 tbsp powdered sugar
  • 1/2 teaspoon vanilla extract

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C). Grease a popover or muffin tin with non-stick spray or butter.
  2. Step 2: In a mixing bowl, combine the flour and salt. In another bowl, whisk together the milk and eggs until well blended. Gradually add the milk mixture to the flour, mixing until smooth. Stir in the melted butter.
  3. Step 3: Pour the batter into the prepared tin, filling each cup about halfway.
  4. Step 4: Bake in the preheated oven for 20 minutes. Then, lower the temperature to 350°F (175°C) and continue baking for an additional 10-15 minutes until the popovers are golden brown and puffed.
  5. Step 5: While the popovers are baking, prepare the strawberry butter. In a bowl, mix the softened butter, pureed strawberries, powdered sugar, and vanilla extract until well combined.
  6. Step 6: Remove the popovers from the oven and let them cool slightly before serving. Serve them warm with generous dollops of strawberry butter.

Notes

Popovers are best enjoyed fresh, but you can store any leftovers in an airtight container at room temperature for up to a day.
