- Step 1: In a large pot, heat the sesame oil over medium heat. Once hot, add the pork belly (or tofu) and cook until browned.
- Step 2: Add the sliced onion, minced garlic, and ginger to the pot. Sauté until the onion becomes translucent.
- Step 3: Stir in the chopped kimchi and gochugaru. Let it cook for an additional 5 minutes.
- Step 4: Pour in the water or vegetable broth and bring the mixture to a boil.
- Step 5: Reduce the heat and let it simmer for 20-30 minutes.
- Step 6: If using tofu, add it during the last 5 minutes of cooking.
- Step 7: Season with soy sauce and adjust to taste. Garnish with chopped green onions before serving.
Notes
Leftover Kimchi Jjigae can be stored in an airtight container in the fridge for up to 3 days. To reheat, simply warm it on the stove over medium heat.
