- Step 1: In a large pot, heat the olive oil over medium heat.
- Step 2: Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- Step 3: Stir in the diced tomatoes, fish stock, white wine, red pepper flakes, bay leaf, salt, and pepper. Bring the mixture to a simmer.
- Step 4: Reduce the heat and let it simmer for 15-20 minutes to allow the flavors to meld.
- Step 5: Add the shrimp, mussels, clams, and white fish to the pot. Cover and cook until the seafood is cooked through and the mussels and clams have opened, about 5-7 minutes.
- Step 6: Discard any mussels or clams that do not open.
- Step 7: Taste and adjust seasoning if necessary.
- Step 8: Serve hot, garnished with fresh parsley, alongside crusty bread.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. If you want to freeze it, I recommend doing so after cooking (but before adding any seafood). Just reheat it gently on the stove and add the seafood fresh for the best flavor!
