- Step 1: In a medium saucepan, combine soy sauce, mirin, sake, sugar, garlic, ginger, and green onions. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
- Step 2: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is fully submerged. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
- Step 3: Preheat the oven to 300°F (150°C).
- Step 4: Remove the chicken from the marinade and place it in a baking dish. Strain the marinade to remove solids and pour it over the chicken. Add enough water to cover the chicken if necessary.
- Step 5: Cover the baking dish with foil and bake for 45 minutes to 1 hour, or until the chicken is tender and cooked through.
- Step 6: Remove the chicken from the oven and let it cool slightly. Slice the chicken into thin pieces.
- Step 7: Serve the chicken chashu warm or cold, drizzled with the cooking liquid as a sauce.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in the microwave or over low heat on the stove, adding a splash of water or marinade if it seems dry.
